My restaurant is Modern American Cuisine.  I am all about the melting pot of traditions and cultures of in this country, and I believe that through food we come together as a community.  I build dishes based on local, fresh and seasonal ingredients, supporting local farmers and industry.  I love hands-on cooking techniques, like making pasta, and cool innovative ways of cooking, like Sous Vide.  I believe cooking is an art and a science of building flavors, combining textures, and balancing salt, fat, heat, sweet, & acid.
